This one is for my fellow winter grillers. Grilled Garlic Bread Cheeseburgers with Wisconsin Mozzarella and Caramelized Onions are indulgent, cheesy, and totally worth braving the winter elements to fire up your grill!
In the month of January alone, Mother Nature provided the Utah mountains with 145 inches of snow. You guys, that means almost 12 feet of snow in 30 days. I snowboarded just about every day, skied with the kids every weekend, hiked the dogs in snow that practically buried them and watched the snowfall rise on our back deck like I’ve never seen it before. And you know what? It was epic. Like really, really epic. My legs feel ridiculously strong and I was outside almost every day doing what I love most. But (there is always a but….) it also meant my domestic duties were….uh…..lacking. My poor boys ate cereal and/or toast for dinner more times than I care to admit, laundry was all but forgotten and work most definitely took a backseat. In short: it was a full month of Snowboard. Eat. Sleep. Repeat.
February has mellowed out a bit. We’ve had a handful of storms but nothing like January. And it’s a good thing because it’s allowed me to resume my duties as mom, caterer and blogger. As much as I love snowboarding every day, I was struggling to get anything else done. I’d come home from the mountain exhausted. Happy, but exhausted. I am elated to announce that we’re eating home cooked meals again, my boys are going to school in (mostly) clean clothes and I’m actually working on something other than my snowboarding turns.
The last two weeks I’ve been full steam ahead in my kitchen endeavors. Partly because of the mom guilt….too many nights of makeshift dinners…..but also because it’s winter! And darn it if we’re not hungry all the time. Durning the colder months, because our household is so active, I tend to cook a little heartier. We earn it, trust me!
Living in a house filled with boys, whenever I ask my crew what they want for dinner- the answer is almost always meatballs or cheeseburgers! Smart boys because those are two of my fave as well! This past weekend, we hit the mountain in the morning like we do and then planned on making cheeseburgers after. It’s kind of our Sunday tradition- morning ski as a family and then a big late lunch. It’s such a nice way to end the weekend and it’s no secret that I love taking a night off from making dinner!
Because our grill is strategically placed just outside our dining room on our back deck, it gets used all year long. But with all the snow we’ve had this winter, we hadn’t used it in almost a month. You guys! I literally had to shovel a path just to get to the darned thing! Not to be deterred, I shoveled my path and fired up the grill. Bonus for the dogs because I threw the ball for them at least a hundred times in-between hurling snow over my shoulder. Plus the extra activity helped me justify how much cheese I put on my burger….
These cheeseburgers were off the charts tasty. Like I said above, we’re an active family so when we do cheeseburgers, we do cheeseburgers. No skimping in Casa de Mountain Mama. These babies were so indulgently delicious and you can bet your butt I earned them after a morning of skiing and shoveling! Grilled to perfection these cheeseburgers are the epitome of winter comfort food. Grilled garlic bread buns, lots (and I mean lots) of gooey Wisconsin Mozzarella because it melts so beautifully yet doesn’t take away from the garlic burger, sweet caramelized onions, and a dijon aioli to finish things off. I added some fresh tomato and arugula just for good measure. 🙂
I truly hope you’re having an epic winter wherever you’re reading from. While winter is my favorite season of the year, I know it’s not for many. So if you just can’t wrap your brain around “epic” and “winter” perhaps you can at least get psyched on “epic” and “cheeseburger”. Just because it’s cold and nasty out, doesn’t mean you should deprive your self of an epic cheeseburger, am I right? Yeah….I’m right. And don’t just take my word for it. A garlicky burger on a grilled garlic bread bun topped with caramelized onions and melted Wisconsin Mozzarella.
- 2 teaspoons butter
- 2 teaspoons olive oil
- 1 large yellow onion, thinly sliced
- 1 lb organic ground beef
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon kosher salt
- 4 thick slices of Wisconsin Mozzarella
- 4 hamburger buns
- 4 tablespoons of unsalted butter
- 1/2 teaspoon garlic salt
- 3 tablespoons mayonaise
- 1 tablespoon your favorite mustard
- sliced tomato
- fresh arugula
- Over medium-low heat, melt butter and olive oil. Add sliced yellow onion and sauté, stirring occasionally for 10 minutes. Add the teensiest pinch of sugar and continue cooking for 20-30 minutes more until onions are nicely caramelized and golden in color. You might need to tinker with your heat throughout the process to ensure that the onions don't burn.
- Meanwhile, place the ground beef in a large bowl along with the minced garlic, Worcestershire sauce, salt and pepper. Carefully mix everything in and divide the meat into 4 equal portions. Shape the meat into burger patties and set on a dinner sized plate.
- Butter each half of the hamburger buns with 1/2 tablespoon of butter and sprinkle evenly with the garlic salt and place the buns on a plate as well.
- Fire up the grill to medium-high heat and let it preheat for at least 5 minutes. When grill is nice and hot, add patties and grill 2-3 minutes each side. Top each burger with a thick slice of Wisconsin cheese and cover the grill so the cheese melts and gets all gooey- about 1-2 minutes more.
- When you put the cheese on the cheeseburgers, it's also a great time to put the buns, buttered side down, on the grill so that they get nice and toasty!
- To serve the cheeseburgers, first mix the mayonnaise and mustard in a small bowl.
- Slather each bun with desired amount of mustard mixture. Add cheeseburger, a handful of fresh arugula and tomato slices if desired and top with 1/4 of the caramelized onions.
