Hot Hummus Artichoke Dip

Lighter than artichoke dip, this Hot Hummus Artichoke Dip is my new favorite. The hummus replaces the mayonnaise and sour cream and in my humble opinion, it’s the perfect winter appetizer.

I find the hardest thing about working from home is staying focused. I wish I could figure out a way to stay on task better but inevitably I end up doing laundry while I cook or edit pictures and blog while I watch TV and I never seem to see one thing through to completion. It takes multiple attempts and sometimes days to fold a load of laundry or get a darn blog post done. I always have at least two or three things going on. And because I get overwhelmed easily, I end up not finishing things in a timely manner. It’s frustrating and I really think I could benefit from getting organized! Ack!

For all of you that work from home: do you have any tips to stay focused and organized?

In the spirit of getting more organized and becoming more focused in 2017, I’m also planning a redesign for the blog. I’m curious if there is anything different you’d like to see? My short list is reorganizing the recipe page, changing the layout on the front page a bit and because I get a ton of emails enquiring about adapting current recipes for high altitude, a print out with all my high altitude tips. As far as new content, what would you like to see? I’ll continue to share high altitude baking recipes but I’m thinking I’ll put a heavy focus on easy mains…think slow cooker, Instant Pot, make ahead, and minimal prep and ingredient type recipes. Now that the housekeeping is out of the way, let’s talk food. Because that’s why you’re really here anyway, am I right?! Should we call this dip apres eats or Super Bowl eats? Because this recipe most definitely covers both. This Hot Hummus Artichoke Dip is the perfect way to warm up and fill your belly after a cold day on the slopes and my guess is it would be a total crowd pleaser if you showed up to a Super Bowl party with this as your contribution. This very well might be the perfect winter app.

I’ve always been smitten with hot artichoke dip. But then who isn’t? All that creamy, rich goodness….it’s pretty hard to resist. But I always eat too much and then always regret it afterwards. All that sour cream and mayonnaise has a way of weighing me down, you know? In attempt to lighten things up a bit, I replaced the usual mayo and sour cream with hummus and went easy on the cheese. Guess what? It’s amaze-balls. Who knew hot hummus would be so good? This is a super basic recipe and a great base recipe to make your own if you want even more flavor. I think it would be delicious with sun dried tomatoes, olives, fresh herbs or even roasted red peppers. I’ll definitely be playing with this one over and over!!

Hot Hummus Artichoke Dip


Ingredients

  • 12 oz of your favorite hummus
  • 6 oz artichoke hearts, coarsely chopped (about 1 cup)
  • 1 teaspoon all-purpose seasoned salt
  • 1 cup shredded white cheddar, divided

Instructions

  1. Preheat oven to 375F degrees.
  2. Mix hummus, artichoke hearts, seasoned salt and 3/4 cup of the cheddar in a medium bowl. Transfer dip to an oven proof dish or pan. Top with the remaining 1/4 cheese.
  3. Baked, uncovered, for 20-30 minutes until hot is dip and cheese is melted.
  4. Serve with crackers, pretzels or fresh cut vegetables.
