As my husband makes me breakfast- it’s a rarity, I assure you- I sit and sip on my coffee and work on this blog post. We chat about this and that and he asks me- another rarity, I assure you- how the blog is doing and what recipe am I posting today. I tell him the slow cooker pork recipe I’ve made a few times over the last few weeks and he immediately perks up. I ask him what I should name it and he say’s, Petey’s Pork Roast. How humble of him, don’t you think? He LOVED this recipe. Like love, love, loved this recipe. He declared it his favorite way I’ve done a pork roast in the slow cooker and it’s all because of the sauce. He big red puffy hearts this sauce. In fact, in-between mouthfuls, he declared I should bottle and sell the sauce! What better testimonial is there?

What is it about the throw together recipes- with little care, no less- that end up being our favorites? I can spend so much time and thought planning and executing what I think is going to be the next best recipe and it’s received with so-so reviews. On the flip side, I need to get dinner on the table stat, throw something together, and it becomes a family favorite. Go figure. That’s sort of what happened with this recipe. I knew I wanted to put a pork roast in the slow cooker and perused the internets to find something new to me. I didn’t have all the ingredients to make either of the two I’d found so I sort of combined the two and did a little mix and matching. Low and behold, we all went crazy over the results.

Mostly savory and a little sweet, the sauce on the pork roast is lick-the-plate worthy. The mustard and worcestershire give it depth, the minced onion replaced my lack of having a real onion or an onion soup packet in the house and the honey and cranberry provide the sweet. This is truly a dump and go kind of slow cooker recipe so you can have it prepped in under 5 minutes. Like I said above, I’ve now made it twice and the first time I served it with mashed potatoes and a salad and this last go around I served it with a cilantro coleslaw and cornbread. Both times it was killer!
