You want to know what I’m digging right now? For starters, I’m on a quick getaway with my man at the swankiest place I’ve ever been. So out of my league, btw. We’re sleeping in, working out, playing tennis, having donuts and espresso for breakfast, watching movies and napping in the afternoon and having cocktails with lunch as we sit and watch the waves crash. And the best part? Falling asleep by 9 every night and sleeping like babies. It’s pretty damn awesome. And I’m feeling so refreshed and giddy, I’m pretty much in love with everything and everyone.

But for the sake of not getting all mushy on you all and rambling on and on and on….let’s narrow it down to what I’m REALLY digging. I’m beyond elated that it’s snowing back home. And praise the sweet Mother of Nature because she’s letting it rip. I’m so pscyhed to go home tomorrow and get in on the action. It’s been awhile since Utah has seen this big of storm this early in the season and it’s kind of killing me that we’re missing it. BUT, it’s supposed to keep snowing for the next few days so hoping to catch the tail end of the storm and get some turns in before all the holiday tourists arrive. Plus it’s hard to complain when you’re on vacation with your man, you know?

Please don’t get weirded out but I’m kind of obsessed with the heated toilet seats with front and rear cleansing in our hotel. (Do you want the details?) I didn’t think so. But too bad. Because hello! It (the toilet) senses when I walk into the bathroom and the seat lifts up on it’s own. The seat is like seriously heated. And so many options to direct the WARM water where you want it to go. A heated bidet toilet. Who knew? I certainly didn’t. My husband and I have laughed so hard we’ve shed tears. And as weird as it sounds, it’s been a highlight of this trip.

Did I lose any of you yet? I hope not because I know toilet talk on a food blog is weird but I’m done and moving on. This sweater. It’s kind of everything. Totally old lady’ish and one of my most prized possessions. I don it every single morning from October-May. I might have even brought it with me. And I may be wearing as I type. It’s so soft and cozy and perfectly oversized for putting on over your pjs on super cold mornings. It gets better as you wash it and I love the deep pockets so I can push my hands down and and wrap the sweater around me tighter. In. Love.

And lastly, even though I’ve been gushing about holiday cookies with my morning coffee for the last few weeks, the obsession is still alive and well. In fact, It’s become somewhat of a daily thing. Not in a gross, eat-all-of-the-cookies way but more of a sit down and enjoy one coookie with my coffee while I do something quiet like read a book or scroll through Facebook. It’s like my new morning ritual and I own it. I work out daily and don’t feel guilty about it for one single minute. And on vacation, I’m simply replacing my homemade cookies with donuts. Or biscotti. I’m not picky. Just consistent. And I’m so going to recreate the candied orange peel biscotti I’ve been nibbling on with my coffee when I get home because it’s ridic.

I made these cookies for this years 5th annual Great Food Bloggers Cookie Swap. The combined efforts of Lindsay and Julie, the cookie swap raised $7000 this year alone and to date $35,000 for the nonprofit, Cookies for Kids Cancer. It’s a pretty awesome collaboration when you can send cookies in the mail and raise money at the same time. These cookies travel well and eat well. Win, win. 🙂

Peanut Butter Ritz Cracker Cookies with Dulce de Leche


  • Yield: 18 cookies 1x

Ingredients

  • 36 Ritz crackers
  • 1 cup smooth peanut butter
  • 1/2 cup dulce de leech or thick caramel
  • 1214 ounces white, dark or milk melting chocolate (I used Ghirardelli wafers)

Instructions

  1. Spread peanut butter onto the back of half of the crackers. Spread dulce de leech on the other half of the crackers. Sandwich them together.
  2. Melt chocolate over a double boiler or in the microwave.
  3. Once chocolate is melted, dip the peanut butter cracker sandwiches into the chocolate to coat. Shake off any excess and place onto a wax paper lined cookie sheet. If desired, sprinkle sandwiches cookies with sprinkles and/or sea salt.
  4. Let chocolate harden at room temperature.
