Leftover Stuffing Waffles

This is my new favorite way to use up leftover Thanksgiving stuffing: Leftover Stuffing Waffles. Cover them with cranberry sauce and perhaps some warmed up gravy, pour yourself a second cup of coffee and dig in.

This might be the most genius use of Thanksgiving leftovers ever. And I so can’t take credit for it. It’s the brainchild of one of my awesome new neighbors. His wife invited me over for pie and coffee this week (see- best neighbors ever!) and while we chatted over pie and got ourselves properly caffeinated, the conversation naturally turned to food as it often does when I’m involved.

He asked me if I’d ever used leftover Thanksgiving stuffing to make waffles? Um, what??? No but holy moly if I didn’t tuck that idea away in the back of my noggin. In fact, I made a batch of my Grandma’s Thanksgiving Stuffing that same afternoon just so I could test the waffles out before I shared the recipe here. You know what? Winner, winner!! Crispy on the outside and soft on the inside, these Leftover Stuffing Waffles are sure to become a staple in our house the day after Thanksgiving. For reals.

I hope you all had an amazing Thanksgiving yesterday. Ours couldn’t have been better if we tried. A killer early morning workout, a family walk with the dog, perfectly cooked turkey + all the sides and a warm house full of good friends and family. A blessed day for sure. Leftover Stuffing Waffles


Ingredients

  • 4 cups leftover stuffing
  • 2 eggs, beaten
  • Leftover cranberry sauce and/or gravy for serving

Instructions

  1. Preheat the waffle baker while you prepare stuffing.
  2. In a large bowl stir together leftover stuffing and beaten eggs until well combined. If stuffing seems dry, ddd a bit of water or chicken stock until well moistened. (Damn, I hate that word.)
  3. Put 1/4 of the mixture into waffle baker and cook until waffle is cooked through and golden on the outside, about 4 minutes.
  4. Repeat with remaining stuffing mixture. Serve waffles with leftover cranberry sauce (slightly warmed) leftover gravy if you’re feeling crazy. Perhaps top it all with a fried egg because hello!
