Pineapple Blender Salsa

It doesn’t get much easier than blender salsa and today I’m sharing the tastiest Pineapple Blender Salsa recipe. It’s sweet and savory, a tad spicy, the perfect consistency and without a doubt the best fruit salsa I’ve ever had. I don’t like to toot my own horn but TOOT, TOOT. This salsa is the shiz.

Salsa in a blender. Who knew? (Apparently you guys.) It all started 3 years ago when I posted my original Quick and Easy Blender Salsa. I had no idea it would be such a hit but it’s been my most popular recipe on Mountain Mama Cooks year after year. I’m not sure if it’s the ease of the recipe- essentially throwing all the ingredients in a blender or food processor and blitzing- or if it’s the actual finished product. When you make salsa in the blender or food processor, it comes out in this happy place somewhere between chunky and smooth. Dare I say it’s the perfect consistency for dipping crispy, salty tortilla chips into?

Up until recently, it never occurred to me to do a fruit salsa in the blender. I always took the time to dice the fruit (usually pineapple or mango) with the onions, peppers and chili’s, doing my best to get the fruit in a small enough dice that it will actually fit on a tortilla chip. It’s no easy feat I tell you. And how annoying is it to use your fingers to get the salsa on your chip only to have it fall off again? I really dig any kind of fruit salsa so when it’s not really working as the whole chip and dip thing, then I’m not above resorting to eating it with my fingers. And who wants to be that girl at the party? Bring me an extra napkin, please.

But after our trip to Hawaii last month and having a blended pineapple salsa at a little shrimp truck on the North Shore, I will never chop again. Because you guys? A blended up version of pineapple salsa is OMG good. Like I went back up to the truck 3 times asking for more salsa good. Like I pestered the food truck employee until he told me how they made the salsa good. Like I might have texted my bother (a fellow spicy salsa lover) pictures of my masterpiece salsa good just to make him jealous. It’s good, peeps. Like really, really good.

And OMG easy. Pineapples are cheap right now. It’s march madness and you must need some kind of finger food. And you all love salsa in a blender. So what are you waiting for?

Pineapple Blender Salsa


  • Yield: 3 cups 1x

Description

A quick pineapple blender salsa recipe!


Ingredients

  • 2cups chopped fresh pineapple, about 1 whole pineapple
  • 1 small garlic clove
  • 1/21 jalapeño (with seeds for spice, omit for a milder salsa)
  • 1/2 cup roughly chopped white onion (about 1/2 medium sized onion)
  • 1/2 cup fresh cilantro leaves
  • Juice from 1/21 whole lime
  • Kosher salt to taste

Instructions

  1. Add pineapple, garlic, jalapeño, and onion to the base of a food processor or strong blender. Pulse until thoroughly combined but a few small chunks still remain.
  2. Add cilantro, lime juice and pinch or two of salt. Pulse just to incorporate cilantro. Taste and adjust salt if necessary.

Notes

This will keep in the fridge for up to 3 days. It’s awesome with chips, over roast pork or with fish tacos.
