I seem to use the old saying, “I don’t want toot my own horn, but….” a fair amount and if you know me at all then you know it doesn’t really apply to me. I’m all for tooting my own horn. Not in a cocky, in-your-face kind of way but more of a I know who I am and I own it sort of way. The way I see it, if you don’t toot your own horn then who’s going to, you know? Own your awesomeness and run with it….it’s worked for me thus far. And that’s not to say I’m all awesome ‘cuz like I said above, if you know me then you know that’s not the case either. None of us are perfect. At least that’s what I keep trying to teach my 8-year old. And my mom. And anyone else who will listen. It’s so easy to get hung up on doing things just right. White Chocolate Citrus Snowballs

Description

White chocolate and winter citrus scent these addictive snowball cookies!


Ingredients

  • 2 1/4 cup all-purpose flour
  • 1/2 cup almond meal
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup + 1 cup powdered sugar
  • 1 tablespoon vanilla extract
  • zest of 1 lemon
  • zest of 1 orange
  • zest of 1 lime
  • 1/4 cup white chocolate chips, coarsely chopped

Instructions

  1. Preheat oven to 375F degrees. Line baking sheet(s) with parchment paper or nonstick baking mat.
  2. In a medium bowl, whisk together flour, almond meal and salt.
  3. In a large bowl, cream together butter and 3/4 cup powdered sugar until fluffy about 3-4 minutes. Beat in vanilla extract and citrus zests. Gradually blend in flour on low speed. Stir in chopped white chocolate just until combined.
  4. Shape dough into scant 1-inch balls, placing cookies 2-inches apart. Bake for 10 minutes or until cookies are set and are very lightly browned around the edges. Allow the cookies to cool for 3-4 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  5. When cookies are completely cool, roll in the additional 1 cup of powdered sugar.

Notes

These cookies can be stored in an airtight container at room temperature for 3 days. They also freeze beautifully.
