Espresso studded muffins loaded with cinnamon chips, Cinnamon Dolce Cappuccino Muffins are reminiscent of my favorite latte at Starbucks and darn, darn tasty.
I should offer a disclaimer here this morning. Today will night be the light, snarky nonsense you’re all accustomed to here on MMC. I’m getting a little more serious and looking inwards today. Don’t worry, this won’t become a regular. I prefer to keep it light here. But sometimes you just gotta get things off your chest.
I think it’s fair to say that we all deal with our own stuff. And by stuff I mean stress, fears, anxieties, demons, insecurities, wants, needs etc, etc, etc. And just because your stuff looks different than my stuff, doesn’t mean I can’t relate. Or that my life is easier than yours. Or that my stuff is trivial. And vice versa; who am I to judge what’s going on in your life? It’s so easy to sit back and judge one another. But you know what? It’s lame. And hurtful. We need to learn to be kinder to one another. And more empathetic. And less judgmental. We’re all go through stuff. So before you go throwing rocks at glass castles, don’t.
I know this because I’m just as guilty as the next person. I know all too well how easy it is to throw stones. And how quickly I can be to judge. And how awful it it feels to be judged. When we judge ourselves against others, it’s a game we can’t win; a no win situation. And one that has to stop. As mamas, bloggers, sisters, friends, daughters… can we please make a pack to ease up? Stop being so hard on each other and more importantly ourselves? Instead let’s celebrate the good and stop focusing on the not so good. We need to lift each other and ourselves up by being positive and supportive. Compare ourselves to only ourselves and try to be better than the day before. Take care of ourselves and focus on being the best we can.
To steal the words of the late Elvis Presley…
A little less conversation, a little more action please

These muffins? Well, there awesome sauce. Studded with ground espresso and loaded with cinnamon chips. Not too sweet and the perfect compliment to a cup of tea or strong brew. Take some to your neighbors or the teachers this week. Cozy up by the fire and grab your book. Share the love, share the muffins.

Espresso studded muffins with cinnamon chips and a crunchy, sugar topping.
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons espresso powder
- 1/2 cup (1 stick) melted butter
- 1 egg
- 1 cup minus 2 tablespoons granulated sugar
- 1 tablespoon pure vanilla extract
- 1 cup milk
- 3/4 cup cinnamon chips
- Preheat oven to 350F degrees.
- Line a standard 12-cup muffin tin with muffin liners.
- Combine flour, baking powder, cinnamon, salt and espresso powder in a bowl; set aside.
- In a large bowl, mix the melted butter, egg, sugar and vanilla extract using a whisk. Whisk to combine throughly.
- Alternate adding the flour mixture and milk, stirring just to combine everything evenly.
- Stir in cinnamon chips.
- Divide the muffin batter among the muffin tins.
- Bake for 22-25 minutes, or until the muffins are lightly browned and cooked all the way through. Remove muffins from oven and let cool on a baking rack.
This recipe has been adjusted for high altitude. If you don't need to adjust for high altitude, increase sugar to 1 cup and baking powder to 2 1/4 teaspoons. Cooking times may vary.
