Taco Tuesday: 16 Awesome Chicken Taco Recipes
Both of my boys started school yesterday and I felt a little melancholy all day. Mind you my littlest is just going into preschool but it’s the first time in almost 7 years that both of them are out of the house multiple days a week. Things were soooo quiet around here yesterday. It’s bitter sweet, you know? I can’t help but feel that they’re growing up too quick but I’m also happy to see them well adjusted and excited to go off to school. It’s going to take some getting used to but I’m sure I’ll adjust to the quiet just fine. (Insert smirky, smiley face here.)
Between back to school and the various after school activities, dinner time is going to change pretty quickly. Gone are the dinners of summer: lazy, late and el fresco and back are the more scheduled afternoon and dinner times. I’m going to have to start menu planning if we want to get a meal on the table each night. Okay, I linked to Barbara’s pressure cooker tacos. Pulled my pressure cooker from storage and made the tacos for my family. My husband and kids were congratulating me on an amazing meal! I couldn’t have been more pleased with the fact that I could a) use my pressure cooker b) use my frozen chicken and c) make a meal that my family loved. Thank you for making me a hero in the kitchen last night!
