EVERYONE LOVES THESE BANANA OAT PANCAKES

There are a few things I am certain of. Like I when I let my dog out- even though she likes to roam the neighborhood- she’ll always come back. When I’m sick and not feeling well, even at the age of 42, I only want my mom. I feel better about myself when my legs are shaved. I do better on at least 8 hours of sleep. I will never like beets no matter how you prepare them and at the end of the day, my preferred outfit will always be t-shirts and sweats. And, lastly..everyone loves these Banana Oat Blender Pancakes.

WHAT MAKES THESE BLENDER PANCAKES THE BEST?

~The pancakes are made in the blender which makes for easy clean up.
~You probably have all the ingredients in your pantry. As a result, they come together quickly.
~These pancakes are fluffy and full of flavor like traditional pancakes yet are free of gluten, dairy and refined sugar.
~They are parent and kid approved!

THE BEST INGREDIENTS FOR BLENDER PANCAKES

The ingredient list is short and sweet. I always use gluten free oats, a banana, honey, and an egg but switch up the milk and add-in’s adapting to what I have on hand.

~I use either Bob’s Red Mill or Trader Joes gluten free rolled oats.
~My favorite local honey.
~I’ve used almond milk, coconut milk, and cow’s milk. All work great!
~It’s best to use a banana that is ripe so this is a great recipe to use bananas that are going brown.
~I like to cook the pancakes in either butter or coconut oil.
~We like to top our pancakes with maple syrup, more butter, and a sprinkle of nuts and coconut.

ADJUSTING THESE PANCAKES FOR HIGH ALTITUDE

These pancakes are already adjusted for high altitude! If you live at sea level, you can still make these pancakes- simply increase the baking powder by 1/4 teaspoon. You can also add a tablespoon of cocoa powder if you want to make chocolate pancakes or a tablespoon of peanut butter powder if you want to make peanut butter pancakes. Chocolate chips are a nice addition, too!

Banana Oat Blender Pancakes


Ingredients

  • 2 cups gluten free oats
  • 1 1/4 cups almond milk or other milk of your choice
  • 1 large ripe, banana
  • 1/2 teaspoon ground cinnamon
  • 1 heaping tablespoon honey
  • 1/4 teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1 large egg
  • coconut oil or butter for cooking

Instructions

  1. Place all ingredients, except egg and coconut oil in the base of a blender and blend until smooth. Add egg and pulse a few times until egg is fully incorporated.
  2. Heat a griddle or large saute pan over medium heat and melt a teaspoon or two of coconut oil. When hot, pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides (about 2-3 minutes per side) and serve hot with maple syrup.
  3. *If batter becomes too thick to pour easily, add a tablespoon or two of almond milk to thin.
