I am looking forward to summer in the worst way. I’m ready for lazy mornings and days spent at the park and swimming pool. I have a gigantic stack of books just waiting to be devoured. I can’t wait for juicy peaches and greens from my garden. I’m looking forward to a schedule free, catering free, obligation free few months.

After a hectic winter, spring proved to be just as busy in it’s own right. While I didn’t have a bunch of clients in town to cook dinner for or a mountain covered in snow stealing much of my time during the day, I somehow kept myself really busy with the blog, volunteering at school and too many extra curricular activities. Between soccer, tennis, t-ball, and hockey, we’ve had something almost every night. With our pressing schedule these past few months, I’ve been putting in extra time to plan ahead and do whatever prep I can during the day so when we get home at dinner time and every one is hungry, I can get supper on the table asap.

My family’s favorite so far has been the Tilapia with Garlic and Extra Virgin Olive Oil. Its simplicity makes it perfect to pair with just about anything. I kept things light this night and served the fish some fresh spinach and my homemade Parmesan Quinoa Cakes and Marinara Sauce for dipping. A chilled glass of Sauvignon Blanc (and apple juice for the littles) makes for a light yet filling and satisfying summer supper. With swimsuit season lurking so closely around the corner, we opted out of dessert in lieu of fresh watermelon and cherries for an after dinner treat.

Spicy Shrimp Romesco would be delicious served with one of my favorite simple dinners of all time – Tex Mex Rice and Beans. Give me a cold beer and I’m one happy camper; this would be perfect to take camping!

  1. You guys did have such a crazy winter, and I’ll bet the lazy days of summer are going to feel SO good. I haven’t seen this fish at the supermarket…I’m going to be on the lookout for it. Your simple preparation is perfect.
