    I love a good stuffed pepper! I recently came across a great recipe for Mediterranean style stuffed peppers…they have quinoa, feta, kalamata olives and they are superb! Definitely gonna try these out, and love the idea of scraping all your leftovers into a bell pepper for a tasty dinner! :)

    I have those same memories of my mom’s stuffed peppers (sorry to my mom too!) But these look great, and I have come to really like stuffed peppers with the right seasonings.

    Hahaha!! I have that exact memory!! So funny that Kalyn did too. I liked them, but didn’t love them, and definitely not fond of green peppers. So I’m excited to try these, and with a yellow pepper instead! YUM!

    These looks fantastic – so much better than the green pepper version. The dill is a really nice addition.

    I’m only seeing 1/2 cup of stock in the steps rather than the 1 cup it calls for?

    Do you blanch the peppers in water or does just covering with foil with the chicken stock in the pan make them tender? Thanks in advance….
