Easter is just two days away. This morning the Mr and I are packing the car, loading up the kids, and headed to Aspen, CO for one last weekend of skiing and visiting with dear friends of ours. It’s always a treat to stay with these friends because my friend, Jill, is masterful in the kitchen. It’s so nice to spend time with someone who loves good food as much as myself. Over a glass of wine or hot cup of tea, we can spend hours talking about new recipes, local food, the importance of eating organic, and the shock at what parents put in their kids lunch boxes.
It’s not all food though, we spend plenty of time talking about our kids, listening to our husband one up each other about skiing, and spending lots of time in the beautiful outdoors that Colorado has to offer.
I’m not sure what I’ll be eating this weekend, but rest assured its going to be

Bacon and Caramelized Onion Quiche– Cause everything is better with bacon, right?
Blueberry Muffins– a favorite in our house, try swapping some of the all-purpose flour for some whole wheat pastry flour for healthier version of this sweet muffin or using fresh blackberries instead of the blueberries.
Lamb Lollipops with Garlic, Rosemary, and Dijon– Who doesn’t love meat on a stick and a built in one at that!
Oven Roast Asparagus with Truffle Oil– easy, pleasey and soooooo tasty!
Spinach Salad with Blackberries and Balsamic– Light, colorful and a great way to use seasonal blackberries.
And for dessert? Meyer Lemon Bars– they scream spring!!
